Assemblage

The varieties included in the 2007 Cryomalus are McIntosh, Cortland, Lobo, Spartan and Empire. These 5 varieties that are in our orchard constitute the perfect balance of Cryomalus.

Elaboration of the must

Cryomalus is a result of cryoextraction and cryoconcentration from ripe apples that have been kept on pallets after harvest and pressed once the degree of freezing is reached.

Elaboration of the ice cider

The fermentation is completed in small stainless steel tanks for 6 weeks at low temperatures. Then, the ice cider is aged 4 months in the tanks at low temperatures before bottling. Finally, the Cryomalus ages 2 more months in bottles to complete the maturation.
